VEGETARIAN RED WOK CRISPY NOODLES

I make this dish frequently but usually I add chicken or shrimp.  When I got home from Dorignac’s yesterday, I realized I had not picked up either.  I’m going to blame my forgetfulness on stress — this was not the first time I went to the grocery store and forgot to pick up what I went for.  Oh, well, I would just have to be a vegetarian for the night.  Well, dinner was delicious.  I love these crispy noodles, fresh vegetables and Cantonese “gravy.”  No matter how many times I make this sauce, I still have to taste, test and tweak to get the right amount of sugar versus soy, so you should do the same.  If you are a little stressed, all that chopping and mincing is therapeutic.  And note that my ceramic oyster shells make perfect prep bowls for my mise en place.  This is my idea of comfort food elevated.

Vegetarian Crispy Noodles

Red Wok Sauce

    Directions

    Do your mise en place and have a glass of wine.

    Step 1

    Make the sauce by combining all ingredients in a bowl or measuring glass and set aside.

    Step 2

    Boil the noodles for 2 minutes, drain and dry and separate with your fingers as much as possible. Then, fry the noodles: Heat the oil in the wok until very hot. Arrange the noodles in the oil so that you shape a sort of "nest," and when they are crispy on one side, turn them over with tongs and let them crisp on the other side. Then place them on a rack over a cookie sheet and keep them warm in a low oven.

    Step 3

    Discard the excess oil in your wok. Heat up the wok again until it is almost smoking. You should have a sheen of oil in the wok. Add the onions and carrots and start to stir fry with a wooden spoon or spatula. Add the garlic and ginger next, stirring constantly so you don't burn them. Add the scallions next. Keep stirring. Add the mushrooms. Stir. Add the snap peas. Add the cabbage. Stir, stir, stir.

    Step 4

    When the vegetables are almost cooked but NOT over cooked or wilted, add the sauce. It will bubble up. Let it thicken a bit. Add the cornstarch slurry and stir. Turn down the heat and serve over the crispy noodles.
